To pick stem and leaf clementines, picking has to wait until the clementines have ripened on the tree naturally, acquiring full color, taste and properties. Since the leaves are very sensitive, clementines cannot be picked when they are green and later processed chemically to change from green to orange, as is done in order to reach the market earlier, despite the loss of flavor and other properties.
